Ah....you are just referring to the wording that includes "Try" or not?
That actually has no functional effect whatsoever.
If you are still using what is now classified as the original old look, it will add the words "Try" to suggest the user look at something new - the now "Standard or Clean" looks. If you are in the now Standard or Clean looks the word "Try" is no longer shown, and you can just switch between different UI looks. Unless you switch to old look in which case "Try" is shown again! :-)

The primary method to disable the surgeweb newlook interface choices is the surgeweb config_*.dat setting of:
newlook_disable true
which can be set at different levels (global, domain etc)
It sounds like you have that enabled??
Also I assume you have the surgemail.ini g_modern_surgeweb enabled?
If is is just for one account drop me that the account's _user.dat file (offlist, and find using "tellmail swath user@domain") There have been several settings to enable/disable aspects of the newlook stuff over recent months but it should all be streamlined and simplified now to just work.
